Spinach Salad
This is a recipe I picked up from an old friend. I had it at one of their dinner parties and I had to ask for the recipe. I once knew someone who would never share their recipes. CRAZY, everyone should share. It is such a wonderful thing when someone likes what you made so much that they want to ask and make it on their own. Share your recipes, it warms my heart when others want to cook and bake.There is just something so good about the mustard dressing, spinach, bacon and feta combo. I am telling you, you are going to make it over and over. Who knew spinach could taste so good.

Ingredients
Dressing
- 1/2 cup olive oil
- 3 Tbsp Dijon Mustard
- 1 Tbsp apple cider vinegar
- 1 tsp dried tarragon if using fresh use 1Tbl
- 1 tsp white sugar
Salad
- 6 cups fresh torn baby spinach
- 2.5 ounces feta cheese crumbled
- 6 slices crisp fried bacon you can never use too much bacon
Instructions
- Blend all dressing ingredients well; this gets better as it sits. I use a little mason jar to shake dressing well.
- Arrange spinach on individual salad bowls or plates. Sprinkle with cheese and bacon. Serve with dressing.
- You can also make this as one large salad for a dinner party. Top with dressing just before serving.
