Radish Spread

This recipe may sound weird. Don't knock it till you try it. This is such a fun different snack but it can also be a little bougie if you need it to be. Serve it with cracker, cucumbers or as the recipe reads. You are going to love this little appetizer.

Ingredients

  • 8 ounces cream cheese softened
  • 1/2/ cup (1 stick) unsalted butter softened
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon cayenne pepper if you like kick get crazy and add a bit more
  • 1 cup grated radishes
  • 1/4 cup chopped green onions chopped
  • 16 slices very thin white bread, crusts trimmed off I like a Pepperidge Farm
  • 1 seeddless cucumber thinly sliced
  • dash Kosher salt

Instructions

  • Use a food processor or box grater to grate the radishes. The radish spread can also be served on its own with a cocktail rye or pumpernickel square.
  • Beat cream cheese and butter with a mixer on medium speed until fluffy. Beat in celery salt and cayenne. Stir in radishes and green onions. Cover and refrigerate at least 1 hour or up to 2 days to blend flavors. This gets better a day later.
  • Spread a thin layer of radish mixture over all the bread slices. Arrange cucumber over spread on half of the bread slices. sprinkle with salt. Top with remaining bread slices. Cut each sandwich into three rectangular strips.
