Crunchy Chicken Macaroni Salad

My grandma would make this on hot summer days after working outside in her garden all day. It's fresh, light and can be an entire meal if you want it to be.

Ingredients

  • 2 cups macaroni noodles (cooked according to package)
  • 2 5 ounce cans of chicken breast (use any chicken)
  • 1/2 cup diced cheddar cheese use what ever cheese you have on hand
  • 1 cup chopped cucumber
  • 1/2 cup sliced radishes
  • 1/4 cup green pepper use what ever pepper you have on hand
  • 1 cup mayonnaise
  • 1/2 cup Italian dressing
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 3.5 ounce can french fried onions

Instructions

  • In a large bowl toss together all ingredients except fried onions.
  • Chill for several hours.
  • Just before serving, toss with 1/2 of the can of fried onions. Garnish with the remaining onions.
