Apple Kale Salad

Years ago I was asked to visit the Arctic Apple orchards in Washington State. I must tell you, it was such a wonderful experience and I met some of the best women. I learned so much from this tour about apple production and how apples are grown on the West Coast. I mean west coast by Eastern Washington State. Living in Ohio lots of things are west coast to me.
We had lunch in one of their orchards and they served this salad. The cool thing about Arctic Apples is that they are the first Non-Browning apple. So exciting the innovation in agriculture. Oh and the apple tastes like a delicious apple. Don't let Kale scare you, the flavor is there.

Ingredients

  • 6 cups curly kale washed, dried, ribs removed and cut into bite size pieces
  • 1/2 cup Dijon vinaigrette
  • 10 ounces sliced Patterson Fruit Farm Apples use your favorite local apple
  • 2 cups sliced grilled chicken breast
  • 1 cup quinoa cooked and cooled
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup salted pepitas pumpkin seeds, almonds or pine nut work too
  • 1/4 tsp pepper

Instructions

  • Toss kale with vinaigrette and place in a large salad bowl.
  • Top with remaining ingredients . Cover and refrigerate until serving.
