Forgotten Chicken

Jane is her name and this is her best simple chicken recipe. Jane also happens to be my mom. This recipe is so simple and it is one of my favorites. Best part is that you do not even cook the rice. It is fast and pair this with a salad and you have your entire meal.
It gets its name because you make it and kind of forget about it. Then bam you have dinner.

Ingredients
  

  • 1 pound mushrooms (saute) optional
  • 2 cans cream of chicken
  • 1/2 soup can of milk
  • 1 cup uncooked rice do not use minute rice
  • 4 chicken breasts you can use legs and thighs
  • 1 envelope Lipton's Onion Soup mix

Instructions
 

  • Saute mushrooms in 1 tablespoon butter or olive oil
  • Grease a 9×13 inch casserole dish.
  • Pour chicken soup into dish.
  • Add milk gradually then add in mushrooms.
  • Spread rice over soup and lightly stir.
  • Place chicken (skin side up if you use skin on chicken) over rice and soup mixture.
  • Sprinkle onion soup mix over chicken and rice. Cover with lid or foil and bake at 350 degrees. Bake time depends on what kind of chicken you use. If you use chicken breast it will take about 1 hours and 15 minutes to get your chicken to 160 degrees. If you use a bone in chicken it will take about 2 hours.
  • Remove from oven and enjoy.
