Super simple roasted leg of lamb recipe. This is for the Slow Cooker or the oven. Recipes are included for both. 

Ingredients

  • 1 4-6 pound leg of lamb
  • 1/2 cup Garlic Powder
  • 1/4 cup Black Pepper
  • 1 tbsp Kosher salt
  • 1 Small Onion chopped

Instructions

  • Trim any excess fat from the lamb. Mix the powdered garlic, pepper and salt in a small bowl. Rub mixture all over the lamb and place in a roasting pan or a crockpot. Put 1/4 cups water in the bottom of the roasting pan or crockpot.  Sprinkle diced onion over the top of the leg of lamb. 
    Roasting in Oven
    Set oven at 375 degrees. Spray roasting pan with a non-stick spray. Roast lamb in the oven at the thickest part until the thermometer reads 135 degrees for medium rare, approximately 1 hour and 20 minutes. 145 degrees for medium, approximately 1 hour and 30 minutes. 160 degrees for well done, approximately 1 hour and 45 minutes. 
    Let the lamb rest for 10 minutes before carving or pulling apart.  
    Crock Pot Cooking
    Place lamb into the crock-pot lined with a cooking bag for easy cleanup. Cook lamb on high for 1 hour. Then turn to medium for 4-5 hours. 
    Lamb should just fall apart.
