Zucchini Bread

I wanted to label this recipe zucchini cake because that is what we call it on our house. It's more like a cake than a bread. When the kids were little I would use the zucchini from our garden and they would help me make "Keeni Cake". I loved hearing those little voices ask for it. Now in their more grown-up voices, they still ask for Zucchini Cake, we still pick our zucchini from Parker's garden and we bake this cake together. Warm cake is their favorite with softened butter. Campbell loves chocolate chips in her bread and Parker likes it plain with lots of butter. We make lots of this and put it in the freezer for fall days when we want a sweet breakfast treat.

Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 3 tsp cinnamon
  • 1 tsp salt
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tsp vanilla
  • 2 cups flour
  • 1 cup nuts optional
  • 2 cups zucchini

Instructions

  • Preheat oven to 350 degrees. Mix all ingredients together. Pour into 2 greased loaf pans. Bake for 45 minutes to 1 hour. It will turn a dark brown. I do the toothpick test and make sure it comes out clean in the center. Remove and cool on a wire cooling rack.
