Street Corn

Street Corn

This is such a great twist on corn. It is fun for a party or just a weeknight meal you want to jazz up. We make this several times a year and it just adds a little fun to the meal.

Ingredients

  • 6-8 ears Sweet Corn
  • 1/2 cup Sour Cream or Mexican Crema
  • 1/2 cup Mayonnaise
  • 1/2 cup Minced Cilantro
  • 1 clove Garlic Minced
  • 1/4 teaspoon Chipotle pepper add more for taste if you like
  • 2 tablespoon Lime Juice
  • 1/2 cup Cotija Cheese Can use Parmesean or Fetta

Instructions

  • Husk and Prepare Sweet Corn
  • Bring a pan of water to a roaring boil. Put corn in and boil for 9 minutes.
  • Whisk together in a bowl: Crema, Mayonaise, cilantro, garlic, chipotle pepper, and lime juice.
  • Top corn with the cream mixture using a spoon, brush or spatula. Serve immediately.
