Glazed Pork Loin

This recipe came from an old neighbor. She is not old, she is just not our neighbor any more. She was a phenomenal entertainer. This was a dish she made for her family and friends often. She passed it along to my sister and she passed it along to me. It's simple and the flavor is unbelievable.

Ingredients

Pork Rub

  • 1-2 pork tenderloins totaling 2.5 pounds You can use any size pork loin or tenderloin, just adjust the cooking time and double your rub.
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp cinnamon
  • 2 tbl olive oil

Glaze

  • 1 cup brown sugar
  • 2 tbl garlic
  • 1 tbl tabasco sauce or franks red hot

Instructions

  • Mix together all ingredients for the rub. Pat the pork loin down with a dry paper towel. Then rub the dry mixture all over the pork loin. All sides including ends. Let this rest on the meat for at least 15 minutes. This can be done a day or two ahead of time as well.
    Put 2 tablespoons of olive oil in a cooking skillet and pan sear on medium high heat until all sides are seared.
    Preheat your oven to 350 degrees.
    Mix together Glaze. Place the pork loin in a baking dish. Pour glaze over the pork and put in oven uncovered.
    Bake in oven until pork reaches 140 degrees. Remove from oven and cover with foil. Optimal pork internal temperature is 145 degrees. The covered pork temperature will continue to rise to the recommended 145 degrees.
